Cuvée des Ardoises

The choice to keep this trio of grape varieties, typical of Languedoc and magical for our Château des Erles wines, enables us to obtain a remarkable level of overall balance.

Winemaking techniques

Harvesting by hand in crates. The grapes pass by the sorting table and then are de-stemmed. The Carignan is vinified using carbonic maceration. The Syrah and Grenache are vinified traditionally.

Cold maceration is performed before fermentation begins, and there is a final hot maceration to perfect polyphenol extraction. Malolactic fermentation takes place in vats.

Matured for 8-10 months in Bordeaux barrels (225 litres), 50% new and 50% second fill, then blended, fined and bottled.

Tasting notes

An unctuous, supple wine with seductive aromas of Asian spice, pepper and smoke, and astonishing purity of fruit with rich flavours of black plum, blackberry and kirsch. A lingering, intense finish with olive and blackcurrant aromas.
