Domaine du Ministre

The St Chinian appellation has existed since 1982 and covers 3,300 hectares. It is adjacent to Minervois in the département of Hérault, in the foothills of the Massif Central.


Winemaking techniques

Harvesting by hand. The Syrah is vinified traditionally with a pre-fermentation cold maceration lasting five days. The Grenache is all vinified de-stemmed. Hot maceration lasting a few weeks. Maturation for four months in barrels for each grape variety. Bottled without filtering.

Tasting notes

A beautifully deep ruby red appearance.

Complex and intense on the nose. A beautiful combination of fruity notes (cherry, plum), spices (garrigue, black pepper) and toasted touches (coffee, chocolate).

Wonderfully balanced on the palate with a supple structure, smooth tannins and concentrated aromas. Fruity notes combined with chocolate touches.
