Chardonnay

A white grape variety originally from Burgundy, well suited to cool or more southern climates, that produces wines with characteristic aromas: yellow fruit, citrus, mineral notes, toasted and buttery touches.

Description

Winemaking techniques

Grape tasting to determine the harvest date. Harvesting by machine during the night to take advantage of the cool temperatures and thus limit oxidation phenomena.

Maceration on the skins for a few hours. Alcoholic fermentation at controlled temperatures (16-18°C). Matured for six months in barrels.

Tasting notes

Pale, bright yellow colour. Apricot, white flowers, flint, toasted almond. Rounded and well balanced on the palate. Finish of ripe yellow fruit and toasted dried fruit.
