Harvesting by machine (between 6 a.m. and 11 a.m.) to take advantage of the cool temperatures and thus limit oxidation phenomena. Cold stabilisation at 8-10°C for several days. Fermentation at 16-18°C with selected yeast to reveal the typical character of Sauvignon Blanc. Maturation on fine lees for several months before blending. The wine is kept away from oxygen throughout the winemaking process.
Pale, bright yellow colour. Fresh and delicate nose with white flower, citrus and boxwood aromas. On the palate, good balance between roundness and a mineral finish. Beautifully lingering.
