Entre-Deux-Mers is geographically delimited by the Dordogne (to the north) and the Garonne (to the south) which join together before shooting out into the Atlantic, after a long journey through the Gironde estuary.

Description

Winemaking techniques

Plot selection. The grapes are tasted to determine the date of the harvest, which takes place at night to preserve the grapes’ aromas. We use as few oenological products as possible to obtain the most natural wine we can, and limit added sulphur. Maceration on the skins (24 hours) – Pressing – Juice stabilisation for seven days then clarification. Fermentation in stainless steel vats at a controlled temperature of 16 to 18°C to reveal the grape’s natural aromas. Maturation on the lees with regular yeast stirring in the vat.

Tasting notes

Pale yellow colour. Fresh and expressive nose with floral aromas and citrus thiols. Well balanced on the palate with a rich structure and beautiful acidity, giving the wine minerality and length. Beautifully lingering aromas with grapefruit notes.
