Grand Vin White

We often forget that the south of France makes some of the best white wines in the country. The proximity of Hérault offers freshness, whilst the altitude gives our wines lively acidity. This perfect correlation between a favourable aspect and the limestone-clay soils where Viognier and Roussanne are planted produces wines with spicy aromas and a delicate mineral structure.

Description

Winemaking techniques

The grapes are harvested at night and quickly taken to the winery for pressing. The juice is kept at 8°C for at least five days before clarification and fermentation. The Roussanne is fermented in new barrels, and the Rolle and Viognier in stainless steel vats. After fermentation, the wines are racked and matured on fine lees.

Tasting notes

Intense nose of mandarin, flowers and citrus. This wine’s delicate and bright acidity, roundness, and lively finish make it a very accessible example, even at an early stage. The Pézenas terroir contributes to its intense nose, its freshness and its minerality.
