Harvesting by hand in crates when ripe (early in the morning). The grapes are sorted on a table and pressed as whole bunches in cake form.

Maturation on racks for 16 months. Disgorging by hand with the addition of 4g of dosage liquor.

Tasting notes

Une is a beautiful pale pink colour.

An expressive and complex nose with aromas reminiscent of the brioche and breadcrust typical of Pinot Noir, enhanced by ripe peach and apricot touches and delicate citrus notes. As you wait, the wine develops on the nose, offering up delicate touches of walnut and hazelnut.

Fine, plentiful bubbles and a direct, fresh style on the palate. A wine that develops in the glass.
